Cob Loaf Spinach Dip – Recipe

This vegetarian spinach cob loaf recipe by taste member, ‘silvery’ is perfect for easy entertaining.

Ingredients:

450g cob loaf
250g frozen spinach, thawed
250g creamed cheese, softened
300ml tub sour cream
40g packet French onion soup mix
Crackers, to serve

How to prepare it:

First:

Preheat oven to 180C/160C fan-forced and line a large baking tray with baking paper.

Second :

Cut 4cm off top of cob loaf to form lid and scoop bread from center of loaf, leaving 1.5 cm edge.

Then tear or roughly chop bread pieces.

Third:

Squeeze out the excess moisture from spinach, discarding any liquid.

Then mix  spinach, cheese, sour cream and soup and don’t forget to season with some salt and pepper.

Fourth :

  • spoon mixture into loaf
  • top with lid
  • place on prepared tray
  • arrange bread pieces in a single layer around loaf.Finally:Bake for 20 minutes and serve with cut vegetables and extra crackers if desired.
